L.A.’s Marugame Monzo has made very fast work of their remodel of the former Mr. Tofu space in Chinatown and have set an opening date of Thursday, Dec. 22 for their Las Vegas arrival.
A hit in Los Angeles' Little Tokyo since its debut in 2013, the concept at The Center at Spring Mountain retail center is operated by Las Vegas locals Mon Restaurant Group, who already operate Sushi Mon, Monta, Goyemon, Monta Chaya and Kabuto.
Monzo, as it has been more informally dubbed, is preceded by rave reviews for its very authentic, thick, rectangular, Sanuki-style udon noodles made famous in the city of Marugame, Japan. To make sure their team keep to traditional preparation methods, culinary staff have been sent to the city to receive on the spot training.

WG Constructors, who also built Hobak Korean BBQ and Yui Edomae Sushi have followed a very similar layout to the west coast original, including the glass-walled kitchen where chefs create hand-pulled noodles with a machine resembling a paper cutter.
On the yet to be revealed menu, clam, "duck nanban," "miso carbonara," "gratin" and "mentai shiso" udon dishes, plus crispy chicken skin and "beef tataki" small plate options.
