Las Vegas finally gets to discover what compost cookies, crack pie and cereal milk soft serve are all about. Milk Bar, the bakery from MasterChef and MasterChef Junior co-host Christina Tosi and the sister to David Chang’s Momofuku opening next door, is now baking up treats at the Cosmopolitan of Las Vegas. And oh what treats they are.

Those compost cookies come packed with pretzels, potato chips, coffee, oats, graham cracker, butterscotch and chocolate chips. That crack pie melds a toasted oat crust with a gooey butter filling. That delightful cereal milk soft serve is made with milk, cornflakes, brown sugar and a pinch of salt so "it tastes just like the milk at the bottom of a bowl of cornflakes."

And though it has an East Coast vibe to it, Milk Bar fits right in at the Cosmopolitan. "We always talked about coming west," Tosi says. "A lot of the customers we love stuff their bags full of our cookies and head west. The other bit of it was finding the right home and the right partner in the Cosmopolitan."

Tosi spent a lot of time in Las Vegas recently as she put together the plans for the bakery that sits just down the hall from Eggslut. "The Cosmopolitan is young and hip and curious, constantly pushing the envelope," says Tosi, who describes racing dune buggies and exploring Red Rock while getting to know the city.

The walk-up storefront has no seating save for a bench meant for customers waiting for orders. Instead, Tosi hopes that customers will stop by Milk Bar, pick up some treats and continue exploring Las Vegas.

Milk Bar features an old milk truck brought back to life, using an evolution of the same visual elements found at Milk Bars in NoLita and Chelsea in New York. Guests can watch treats being made behind the counter and smell cakes as they come out of the oven. A condiment coffee station wrapped in neon awaits.

Tosi describes the menu as tried and true classics along with some Las Vegas exclusives. Two soft serve machines dish out four flavors including cereal milk, sweet potato pie and crack pie. Milkshakes arrive as well, along with spiked versions in White Russian, fruity cereal milk with rum and a hot peppermint patty. Exclusive Milk Quakes feature soft serve blended with cremes and crunches. Guests can also order from the full menu of cakes three days in advance or can pick up what’s in stock.

"We planned the identity of the store but we will adjust to what people want," Tosi says.
