BabyStacks Cafe Number Five Heads Southwest

The BabyStacks name will soon be circling Las Vegas.

Locally owned breakfast and brunch favorite BabyStacks Cafe will be bringing their fifth location to the southwest this year, nine miles south of their Spring Valley outpost.

BabyStacks number five will fill 2,100 square feet at the Blue Diamond Marketplace, sitting next to the XO Chinese Food restaurant. The Marketplace is already home to a Capriotti's and Rounders Bar & Grill.

Babystacks first debuted in 2010 near Desert Shores, expanding to Spring Valley, Centennial and Henderson, all keeping the same menu and daily opening hours of 7 a.m to 2 p.m. and until 3 p.m on Saturday and Sunday.

Their traditional American breakfast menu adds a self-described "island twist" of Filipino and Hawaiian dishes, including adobo fried rice, loco mocokalua pig benedict and a spam scramble.

Last month, Food Network star, chef Robert Irvine dined at one of their locations, pausing to to tweet a review:

Construction work has begun on the Blue Diamond space and is promised to be "coming soon."
