Clique Hospitality isn’t done with Green Valley Ranch. Bottiglia Ristorante & Enoteca is set to debut at the resort in Henderson, and now comes word that Borracha Mexican Cantina, the Mexican restaurant and bar that pays homage to the Day of the Dead, is looking at an opening in time for Cinco de Mayo.
The Mexican-inspired dishes and drink menu of cervezas, tequila and specialty cocktails bring a lighter festival air to the resort. Chef Brian Massie of Clique plans to serve up a menu of "universal and unconventional" dishes. Shareable plates and "imaginative" burritos make the menu, as do tacos formed with tortillas made in house and meats that range from rotisserie chicken, slow-cooked short ribs and fresh Baja fish.
Decorative and festival skulls honoring the Day of the Dead are found all over the space, while underfoot, a hand-painted floor greets guests. Dark wooden beams and a wraparound graffiti mural wrap up the space.
