The Hummus Factory makes the switcheroo from food truck to bricks-and-mortar restaurant sometime in mid- to late May. The Mediterranean fusion food fans loved moves into 7875 W. Sahara Ave., in suite 101 next month near Sushi Fever.
Owner Tony Tabet says the 3,000-square-foot restaurant that will seat about 100 near Buffalo Drive and Sahara Avenue will feature the same Mediterranean food with an Asian twist found on the food truck, which he sold last year. Look for kabobs such as chicken kabobs with a bed of onions and zucchini, lamb gyros, hummus sliders, eggplant dishes such as crispy eggplant fries, falafel and more. Even shawarma makes an appearance in the sliders. Vegetarians can try the stuffed grape leaves or the falafel plate. Frarej, a chicken dish baked with potatoes and tomatoes, as well as kafta and kibbi also make the cut.
The Hummus Factory also has burgers such as the Factory Burger and the Greek Burger.
Tabet once had Hedary's back in the day with a location in Fort Worth, Texas, as well, and his aunt opened Khoury's Mediterranean Restaurant in Las Vegas.
