Hawaiian-inspired Soulfish Poke hopes to be the early local leader in a nationwide trend for serving healthy raw fish bowls in a quick, casual setting. The first of three locations planned to open this year is now serving in the former Juice NV juice bar space at the Park Place Shopping Mall, close to Twin Peaks Henderson.

In a similar style to a Subway or a Chipotle, guests walk past the counter to choose their bowl ingredients. They begin with rice, or noodles, then move on to a choice of Alaska salmon, yellowfin ahi tuna, tiger shrimp, scallops or octopus. Tofu is also an option.

Next, toppings like kimchi, avocado, bell pepper, dried seaweed, crispy onion, macadamia nuts and fresh ginger can be added, plus a final sauce option before the creation is mixed and served in a bowl.

Soulfish's second expansion is already promised to debut in June. They recently signed a lease on a 1,430-square-foot space at the Orange Grove retail center, also home to SkinnyFats and a third Soulfish location is expected to arrive somewhere on Rainbow. Earlier in the year the company revealed they were eventually aiming to host five local destinations.
