Eggslut Now Has an Opening Date at Cosmopolitan

The egg-centric restaurant plans to serve from early to late

LA’s Eggslut now has an opening day at the Cosmopolitan of Las Vegas. Look for the brand’s first expansion outside of Los Angeles to serve egg-centric dishes from morning to night starting on June 10. The restaurant from chef Alvin Cailan takes over the former Va Benne space on the second level of the East Tower.

Eggslut allocated an estimated $960,000 for construction on the 950-square-foot space.

Look for a menu that includes the bacon, egg and cheese sandwich with hardwood smoked bacon, an over medium egg, cheddar cheese and chipotle ketchup, served in a warm brioche bun; and the Slut, a coddled egg on top of smooth potato purée, cooked in a glass jar topped with gray salt and chives, served with slices of baguette.

Also on the menu, The Gaucho Sandwich with seared wagyu tri-tip steak, chimichurri, red onions and seasoned arugula topped with an over medium egg in a warm brioche bun.

Eggslut plans to be open Monday and Wednesday through Friday from 7 a.m. to 7 p.m., and Tuesday, Saturday and Sunday from 2 a.m. to 7 p.m.
