Roy Ellamar’s Harvest at the Bellagio already has that delectable snack wagon that roams the dining room with different savory treats every night. Ellamar changes out the dishes to suit his whims.

Now comes word that Ellamar invited in chefs from different restaurants at the Bellagio to take over the snack wagon once a month. First up, Michael Mina plans to be the surprise guest chef of the snack wagon, bringing small bites from his eponymous restaurant at the resort on Wednesday night.
Fear not though. Ellamar’s traditional snack wagon, featuring savory farm-to-table small bites, also will roam the dining room during the special event.
In the past, Ellamar has served a smoked salmon belly dip paired with an everything croissant and broccoli raab pesto served with naan bread. Try the Painted Hills hangar steak tartare with an oyster aioli and chioggia beet with quinoa and blood oranges, as well as the agedashi tofu with smoky ham dashi and trout roe if they happen to be available.
