Chef Kerry Simon’s legacy lives on at a new restaurant coming to Henderson. Vegas Seven reports that Standard & Pour brings a "modern take on a gastropub" to the former Firefly location on Eastern Avenue.

Simon Hospitality Group and Titan Brands, the owner of Hussong’s Cantina and Slice of Vegas Pizza in Mandalay Place, partnered on the project that is now under construction and plans to open in late July or early August.

Simon Hospitality Group president and managing partner Cory Harwell says the second-story restaurant is being completely remodeled with a feminine touch.

Back in September, Eater Vegas reported that Standard & Pour would feature "Kerry's classics," including "crispy sesame rice with spicy tuna and eel sauce and wok charred edamame with ginger salt, lime, and togarashi."

He tells Vegas Seven that this was one of the final projects Simon worked on before his death. Simon died last September, a result of complications related to a severe and rare form of Parkinson's disease called MSA, multiple system atrophy. While the disease had confined the "Rock 'n' Roll Chef" to a wheelchair, he was still actively working on new projects, including this new gastropub in Henderson.

Simon also has Carson Kitchen in Downtown Las Vegas.
