Let the era of Eggslut in Las Vegas begin. The former food truck turned restaurant out of Los Angeles debuted at 7 a.m. at the Cosmopolitan of Las Vegas with a menu of breakfast-only dishes served day and night.
Chef Alvin Cailan loves some eggs, and features a tight menu of his breakfast sandwich favorites. Order up the bacon, egg and cheese sandwich with hardwood smoked bacon, an over medium egg, cheddar cheese and chipotle ketchup served in a warm brioche bun; or the Slut with a coddled egg on top of smooth potato purée, cooked in a glass jar topped with gray salt and chives, served with slices of baguette. The Gaucho Sandwich with seared wagyu tri-tip steak, chimichurri, red onions and seasoned arugula topped with an over medium egg in a warm brioche bun marks Cailan’s take on a classic steak and eggs.
Cailan, who opened at the Grand Central Market in Los Angeles in 2011, extended his hours for Las Vegas to serve the late-night crowds who head to Marquee.
