Downtown Summerlin’s Pancho’s Mexican Restaurant kicks off a champagne brunch from 10 a.m. to 3 p.m. every Sunday.
Order up an entrée and get free Champagne, seasonal fruit and buñuelos, crispy pastries sprinkled with cinnamon and sugar and topped with whipped cream, for dessert.
Dishes include the especial de Cabo, made with chicken breast mixed with sautéed shrimp, crab meat, onions, tomatoes and topped with melted cheeses, diced avocados and tomatoes, and served with Mexican-style rice for $22.95; Huevos Divorciados, made with two eggs and a shredded beef enchilada covered with a chunky Poblano sauce, Mexican cotija cheese, sliced avocado and served with rice and black beans for $17.95; and the machaca Guadalajara with shredded beef sautéed with tomatoes, onions and bell pepper, mixed with scrambled eggs and served with Mexican-style rice and beans for $17.95.
Cocktails include 16-ounce margaritas such as the Cadillac “Naughty Maggie” Margarita, made with Jose Cuervo Especial Gold Tequila mixed with fresh lime juice, sweet and sour and triple sec, hand-shaken and topped with Grand Marnier, for $11.75; and the jalapeño Margarita, made with Zarco Silver tequila mixed with homemade margarita mix, triple sec, and topped with sliced jalapeño and a Tajín powder rim garnish for $10.25.
