Chef Roy Villacrusis recently joined Andiron Steak & Sea at Downtown Summerlin as a consulting sushi chef. Villacrusis is familiar with Las Vegas; he worked for Shibuya Japanese Restaurant at the MGM Grand from 2005 to 2007. Most recently he was the executive sushi chef at Aah Loi Thai & Sushi in Jupiter, Florida.
During his time in the Southeast, he was also executive sushi chef at Sakura Japanese Restaurant in Palm Beach Gardens, Saito’s in West Palm Beach and Mark’s Restaurants in South Florida. He also was owner at Kubo Asiatic Cuisine in North Palm Beach and consultant chef at Dirty Martini in Palm Beach Gardens and Kapow Noodle Bar in Boca Raton.
Chef Villacrusis has won numerous “Best Sushi” throughout multiple publications in South Florida, was Palm Beach Illustrated’s 2014 Food Artist of the Year and was a back-to-back winner for the Palm Beach Food & Wine Fest Throwdown.
Back in Vegas, chef Villacrusis brings his flair for sushi to Andiron Steak & Sea. He also plans to open his very own restaurant focusing on Asiatic cuisine in late 2016 or early 2017.
