With no fanfare and zero coverage apart from Eater Vegas updates, Ramen Kobo debuts today in Spring Valley, promising a fiery twist on the ramen favorites created by their Monta family of restaurants
Opening hours will be Monday to Friday from 11:30 a.m. to 2:30 p.m and then 5 until 11 p.m. On Saturday and Sunday there will be no brief closure and they will serve straight through from 11:30 a.m. to 11 p.m.
No menu has yet been revealed, but the self-described "noodle making factory" promises a more "hot & spicy" focus than their previous ventures and will still offer selections from their original locations, popular for their tonkotsu and miso ramen choices.
The company already operates Monta Ramen in Chinatown, Monta Chaya in Henderson, plus Goyemon Sushi House and two local Sushi Mon locations.
The 1,542-square-foot casual spot sits in the built from scratch Durango Arby retail center, a short walk from another recent arrival, the sushi and seafood of Pier 215.
