The much-anticipated debut of Eggslut from chef Alvin Cailan will arrive direct from Downtown L.A.'s Grand Central Market on Friday, June 10, slotting into a corner spot on level 2 of the Cosmopolitan of Las Vegas.
Taking over the 950-square-foot shuttered home of Va Bene Caffè Due, the casual service expansion features only a dozen stools inside the open plan space. Unlike the original, there is no opportunity to sit right at the counter.
A former food truck, Eggslut joined the Market in late 2103. Run by Cailan and manager Jeff Vales, the team creates elevated breakfast sandwiches and a very loyal clientele, happy to endure long lines to try their $10 Slut and the $8 Fairfax.
Opening hours in Las Vegas will be from 7 a.m to 7 p.m on Monday and Wednesday to Friday and midnight until 7 p.m. on Tuesday, Saturday and Sunday.
