MGM GRAND — Food & Wine chats with Joël Robuchon about his two restaurants in Las Vegas and how he was persuaded to open L’Atelier de Joël Robuchon and his namesake Joël Robuchon 10 years ago. Initially he saw Las Vegas as the wild west, "with cowboys and Indians, where you see a cowboy lost in the middle of the desert!" But after trying California produce and American wheat, he moved forward with his plans. Then he discovered that people from all around the world were eating his food. "…with this large variety of clientele, it's really made me realize that, when the food is good, everybody likes it."
