Sushi Burritos Head to The Las Vegas Strip

The mashup of sushi and burritos shows no sign of letting up and makes its debut on the Las Vegas Strip in December. Jaburritos, the sushi burrito restaurant with a location at Rainbow Boulevard and Patrick Lane, from Ken Aoki plans to make the move to The Linq promenade in the former Ruby Blue space by the end of the year.

Chef John Chien Lee of Soho Japanese Restaurant created the concept and then split with Aoki, choosing to operate the equally successful Soho SushiBurrito in the original space. He'll be also be expanding to Spring Valley later this year, to the Beltway Commons, opening the more bowl focused Soho Sushi Bowlrrito.

The menu features Jaburritos, wrapped in options such as seaweed paper or a tortilla, Jachos, built over corn or taro chips, or a Jabowl, featuring salad or rice.

Individual proteins include spicy tuna, grilled steak, tofu, salmon and soft shell crab, or diners can opt for the "chef creations" combinations.

In front of Jaburritos, expect Urban Turban Express, self-described as a "kiosk" taking over the shuttered NJOY Vaping Bar, across from cupcake store Sprinkles and the under construction In-N-Out Burger.
