Las Vegas, you have a new steakhouse to explore. Cornerstone debuted at the Gold Coast, taking over the former 20-year-old Cortez Room with its prime rib, steak and seafood menu after a quick makeover. Inside find a black-and-white, tuxedo-inspired décor that sports dashes of cerulean blue. White-washed brick walls feature mercury glass sconces, vintage photos and chalkboard murals. A blue silk-shaded chandelier hangs in the center of the room.
At the bar, find the liquor library with more than 60 types of whiskey from around the world. Scotch, bourbon, rye and small-batch whiskey make appearances, finding their ways into a Prohibition-inspired cocktail, such as the Old Fashioned, made with Old Forester Bourbon, barrel-aged for 40 days in-house. The bar also features whiskey flights starting at $17 and ranging from Kentucky to rye to a "Kamikaze flight" of Japanese whiskeys. The menu also serves the Crown Royal Cornerstone Blend, the first limited release from Crown Royal’s Noble Collection.
All things beef make the menu, with eight different cuts, nine toppings and 12 sides. Order a prime rib crown steak, sautéed mushrooms, bacon green beans, lobster mac and cheese, or three different types of French fries. For dessert, find the Limoncello cake, a light lemon cake layered with mascarpone pastry cream and infused with Limoncello Liqueur, served up with a shot of Limoncello.
