Shawn McClain’s Libertine Social Debuts at Mandalay Bay Tonight

Chef Shawn McClain already has his stellar Sage at Aria along with his pizza restaurant Five50 Pizza Bar at that resort. As of 5 p.m. today, he now takes his dining experiences to Mandalay Bay with the opening of Libertine Social, a space that "encompasses the social spirit of a house party."

The menu here is a little different than the norm in Las Vegas with gourmet toasts and dips, flatbreads, sausage boards and more.

"I want the food at Libertine Social to feel comforting and provocative at the same time," McClain says in a press statement. "I aimed to create a menu that brings people together to experiment through dishes that appear familiar, but crafted in a manner with robust flavors that they’ve never experienced before."

Those toasts and dips include a warm Dungeness crab dip as well as duck pastrami on toast and topped with savoy cabbage, sauerkraut aioli and spicy mustard seeds.

The artisanal sausage boards feature spicy Italian, Louisiana hot link and bratwurst served with cheeses such as Tipperary cheddar, Rogue Creamery Smokey Blue Cheese and brillat savarin. All boards come with sauerkraut, pickled hot peppers and mostarda.

The menu also has small plates for sharing that include a parmesan churro and marinated ahi tuna cones.

McClain also highlights ingredients sourced locally in dishes such as summer corn angolotti and a grilled kale salad with grapes, dried cherries, radicchio, radishes, pine nuts and a creamy dill dressing.

Entrees include the Libertine Burger made with a Creek Stone Farms beef patty, cheese made in-house, locally sourced tomatoes, caramelized onions and a bordelaise sauce. Harissa-rubbed mussels are seasoned with mint, chervil and lime.

From the grill, look for the Snake River Farms wagyu skirt steak and the Snake River Farms wagyu flat iron. Fish cuts will change daily based on seasonality and availability.

For flatbreads, find ingredients such as caramelized fennel and spicy Italian sausage or smoked country ham.

The restaurant features a cocktail program to match from Tony Abou-Ganim spread between two bars, a dining room, chef's table and patio. Below, the menu.
