Little Tokyo Headed to Paris Las Vegas

Sushi and a raw bar will neighbor Le Village Buffet

Two years after HIG Management debuted their casual, Taiwan-inspired Yong Kang Street restaurant on "Le Boulevard" at Paris Las Vegas, the company has begun work on adding a Japanese venture right next door.

Little Tokyo will feature sushi and a raw bar, all under construction between the dumpling and noodle house and the resort’s Le Village Buffet. HIG has successfully spread their Little Tokyo brand to more than 20 shopping mall food courts around the country, serving quickie teriyaki and tempura dishes, but in Las Vegas the only similarity will be logo, designed with a sushi chef’s short-sleeved coat replacing the letter "T."

HIG's executive sushi chef Eric Ou will oversee the fancier Strip incarnation. More than 1,000-square-foot smaller than Yong Kang, the compact 1,425-square-foot space will allow a maximum occupancy of 49 guests and include seating inside and at a counter facing the open kitchen.

Chef Ou is also behind HIG's other recent project, Poukei, the first fully dedicated sushi burrito outpost on the Strip, now open next door to The AXIS theater at the Miracle Mile Shops.
