Meet Owl’s New Menu and Chef

’s Owl celebrates its grand opening this weekend nearly four months after the restaurant and bar debuted over Memorial Day weekend. Perhaps not an achievement worthy of mention, but Owl has gone through the ringer since it opened. Earlier this month, the entire kitchen staff walked out after demanding more money and time off.

Fast forward to this weekend when Sandra Mallut takes over the kitchen. The former culinary coordinator for Life Is Beautiful once ran Henrietta Poodlestone’s Bake Shop in Los Angeles, where she provided food to the sets of Desperate Housewives, Private Practice and Weeds. She even worked as the culinary director at Southwest Career & Technical Academy.

Galdau says the new short menu features nine basic items. Look for bacon blue cheese sliders with pesto mayo, seasoned fries with dipping sauces, crab cake slider with a blood orange aioli, a grilled cheese sandwich with garlic aioli (and guests can add bacon), panko-fried pickle chips with blue cheese sauce, refrigerator pickles, a vegan pulled pork sandwich, wings with sauce and sautéed seasoned shrimp with rice.

Next week Galdau says he’s rolling out a salmon dish, a Cubano sandwich, a coq meat sandwich and poppers, along with more vegan dishes.

"I just want to make sure every time is perfect," he tells Eater Vegas. "We wanted to start small and quite honestly perfect."

Owl also carries a list of craft beers including Mission Hefeweizen, Virginia City honey pale ale, Stoneyhead Moia IPA, Crafthaus Zitrone, Dust Bowl Hops of Wrath IPA and Butternuts Snapper Head.
