Meet the new team behind the freshly renovated Charlie Palmer Steak at the Four Seasons. First up, Thomas Griese, the new executive chef at the steakhouse. Griese spent time at Thomas Keller’s Bouchon at the Venetian and Le Cirque at the Bellagio, then worked under Michael Mina at Michael Mina 74 and at San Francisco’s new Mina Test Kitchen. Griese is working with Charlie Palmer to create all new menus debuting in late September. The restaurant’s long-standing "Cut of the Week" menu continues.
New pastry chef Kristen Hutton also just joined the team, bringing her classic baking and pastry technique at Palmer’s other Las Vegas restaurant, Aureole at Mandalay Bay.
Charlie Palmer Steak also features the world’s only married master sommeliers, Steven and Lindsey Geddes. Steven oversees restaurant service and operations as director of operations, while Lindsey manages the restaurant’s wine list. The two plan to introduce new wine experiences in the late fall.
