The J.W. Marriott officially has a new steakhouse, Hawthorn Grill, the first new restaurant at the resort in five years. Steakhouse fare and American classics find a home on the menu from chef Joseph Swan, formerly of the Eiffel Tower Restaurant.
French onion soup with three types of onion, sherry, brioche crouton, Gruyere and provolone; roasted beets and burrata with prosciutto, toasted pistachios and arugula; and sweet and sticky lamb ribs with honey, mint, garlic and lemon fall into the starters side of the menu.
Entrees include a Colorado lamb T-bone with chimichurri; a chili-rubbed smoked Kurobuta pork chop; Maine lobster with sweet potato gnocchi with spaghetti squash, spinach and shellfish butter; and a slow-braised prime short rib with parsnip puree, roasted Brussels sprouts and crispy shallots. Christian Umlauf handles the front of the house as the general manager while the J.W. Marriott’s Jeremy Choo oversees the desserts. Blau + Associates, a group behind Andiron Steak & Sea and Honey Salt, served as consultants on the project.
