A sushi chef with roots on the Strip and Downtown Las Vegas packed his knives to head up north for a new Japanese experience. Find Joon-Yong Cho, who previously upgraded the sushi options on the Bocho menu and also worked at SushiSamba at the Grand Canal Shoppes, at the new Umami in Centennial.

One side of the menu features all dishes from the sushi bar such as a recent special, live lobster, as well as rolls such as the No. 5 with albacore tuna, spicy tuna and fried onion rings or the Superman burrito with crab, cucumber, avocado, tuna and salmon wrapped in lettuce. A spicy taco yuzu with marinated octopus and tuna poke find a home in the appetizer section.

The kitchen dishes out chashu ramen with pork belly in a miso broth, short ribs, karaage and grilled salmon or yellowtail.

For dessert, must-tries include the strawberry champagne cake and tempura ice cream.

Inside find a modern decor with a painted mural of samurai in the dining room and a projection screen television tuned to sports.
