A barbecue switcheroo is taking place in Spring Valley and the "Lil Bitty Piggy" mascot of Rollin Smoke Barbeque is already plastered across the window of their new home.
Rollin Smoke will take over the former site of Billy’s BBQ, which shuttered last October. The 1,750-square-foot corner spot at The Mall at Grand Canyon in Spring Valley sits at the corner of Flamingo Road and Grand Canyon Drive.
Billy's BBQ debuted in November 2014, originally created and operated by competition winning local smokers Esquire BBQ. In its place, Rollin Smoke will bring their hickory smoked barbecue and "down home country sides."
Menu favorites include "Pit Specials," of brisket, pulled pork, chicken, spare ribs and hot links, their "Outlaw Burger," featuring a hamburger mix of brisket, onion and bell pepper and their Travel Channel featured, "Smoked Meatloaf."
Their original, very low-key Highland Drive location debuted in 2012. They also operate Rick’s Rolling Smoke Tavern in conjunction with Rick Harrison of Pawn Stars fame, the lone dining option at his Pawn Plaza mall on Las Vegas Boulevard.
Rollin Smoke have yet to reveal operating hours and an exact opening date, other than promising they are "coming soon."
