Latin chicken purveyors Pollo Campero opens its second Las Vegas location and 75th in the nation on East Charleston Boulevard.

Traditional fried, grilled and extra crunchy chicken meals make the menu lineup at this fast-casual restaurant that originally opened on West Craig Road about six months ago by GSK 3 Investments, owned by franchisees Maria Enamorado and her sons, Gurpaul and Gurdev Kular.

Pollo Campero uses its own blend of herbs, spices, and essential oils in its secret recipe it originally created in 1971.

Already on the docket, a third location, taking over a shuttered 2,888-square-foot Pizza Hut, adjacent to Richfield Boulevard. The highly visible spot is half a mile from the Palace Station resort and Chick-fil-A. The restaurant will receive a makeover and add a drive-thru window, a process that will take at least a few months.
