Big changes coming to Wynn with a restaurant closing and new chefs taking over.
First up, The Country Club, the steakhouse overlooking the golf course, closes on Jan. 14 since the resort is starting construction on Paradise Park, the $1.5 billion new lagoon, water sports facility, convention center and hotel surrounded by sand beaches over 140 acres.
That means Rene Lenger, the chef at The Country Club, bows out after the final brunch and takes over Tableau, whose executive chef David Middleton heads over to Lakeside as chef de cuisine under executive chef David Walzog.
Over on the Encore side of the resort, Theo Schoenegger departs Sinatra after an eight-year run at the restaurant that tips its fedora to the standards singer. Luke Palladino the former executive chef at Salute Trattoria Italian that closes in early December at Red Rock Resort, takes over the Italian restaurant at Encore. He plans to put his own “twist on classic Italian dishes, while continuing to pay homage to Ol’ Blue Eyes.”
Andrew Pollard, formerly a beverage development specialist with Breakthru Beverage Nevada, comes on board as the assistant director of beverage development. He oversees the cocktail menu development at all food and beverage outlets at the resort.
