Wondering what will take the place of Salute Trattoria Italiana at Red Rock Resort. Chef and restaurateur Scott Conant plans to open Masso Osteria in the space next year.
The frequent judge on Chopped doesn’t plan to make many changes to the space. “The bones are amazing and the kitchen is gorgeous. It’s a very solid space to work from. So from a design perspective, we just want to kind of lighten it up and make it much more casual,” Conant tells the Review-Journal.
Conant chose the word “masso,” which is Italian for “boulder,” “to reflect the rocky desert landscape that surrounds his adopted city.”
Conant got his Vegas start with D.O.C.G. Enoteca and Scarpetta at the Cosmopolitan of Las Vegas. D.O.C.G. closed in June, and Conant is no longer involved with Scarpetta. He says the menu will feature dishes that are variations on his classics, including his signature spaghetti dish, pasta al pomodoro.
Expect a February debut. Salute closed this month at Red Rock Resort.
