When the former Bistro Buffet shuttered over the summer, the Palms resort promised a food hall-styles setting for the next incarnation of an all-you-can-eat experience. Built with an original, estimated construction budget of $6 million, the A.Y.C.E. Buffet debuts today, with an open-plan footprint right on the edge of the casino floor and seven food “stations” for diners to browse.
Informally known as the “Ace” buffet, the 9,685-square-foot, brightly lit space features hedge row-style low walls, plenty of plaid design motifs and the Roastery, Greenery, Hearth, World Pan, Smoke & Fire, Sweet & Light, and Revival themed food sections.
For patrons not prone to indulgence, the Revival station is devoted to “wellness, power-boosting super foods and specialty vegan, vegetarian and anti-inflammatory cuisine,” including "rainbow chard hash and cauliflower and quinoa grits," while the Greenery offers salads, fruits and greens.
For a more traditional buffet feast, international flavors at the World Pan include Moroccan lamb, congee, bao buns, and strogonoff, while the Roastery has installed a white oak and mesquite chip burning grill for its 900-degree heat. Upgraded spins on familiar buffet fare includes smoked brisket Benedicts, cornmeal Johnny cakes and a mini-duck cassoulet with white beans.
Priced between $12.99 for breakfast and $21.99 for dinner, with discounts for Boarding Pass players club members, a Sunday brunch has also been added, dedicated to serving bottomless mimosas.
