Blue Ribbon Sushi Bar & Grill at the Cosmopolitan of Las Vegas quietly shuttered last month, but fans of Eric and Bruce Bromberg will only have to wait a few months before the sibling chefs and restaurateurs return to the resort.
Work has already begun on turning the third floor, seven-year old grill into Blue Ribbon. An estimated construction budget of $2.5 million has been allocated for the build, remodeling the generous 6,053-square-foot space.
The work will "refresh" the dining room, add a new bar and also create a private dining area. The Cosmopolitan is promising a summer debut.
The menu will feature direct inspiration from the original Blue Ribbon Brasserie in New York, which rocketed the brothers to fame in 1992. Already announced dishes include, "bone marrow with oxtail marmalade, fried oysters, steak tartare and the Brombergs' famous fried chicken."
Once it debuts, the restaurant will be open for lunch, brunch and dinner service and is making a special effort to cater to the Cosmopolitan’s late-night crowd.
