Wondering where Bradley Manchester went after his Downtown Las Vegas restaurant Glutton abruptly closed in December?

Now he’s the executive chef at Oyster Bar at the Hard Rock Hotel. The restaurant opened last week.

Oyster Bar features fresh oysters, seafood, produce and pan roasts. The 752-square-foot restaurant in the HRH Tower offers lunch and dinner daily. Look for calamari "fries" with Sriracha aioli, sweet soy, crushed peanuts and chives; oysters and pickles served with homemade buttermilk caper sauce; a classic pan roast with a choice of shrimp, crab, lobster or all; curried coconut seafood stew with jasmine rice and pickled chilies; shrimp and grits with sharp cheddar and andouille sausage grits; and fish and chips loup de mer with malt vinegar aioli and cocktail sauce.

Manchester also oversaw the culinary program for five restaurants at Red Rock and worked at Cosmopolitan of Las Vegas, Caesars Palace and the Renaissance.

He says he still has plans to open two new restaurants.
