Wondering where chef Mike Minor landed? He had planned to open Bandito Latin Kitchen & Cantina on Restaurant Row with partner Kent Harman. The duo worked together at Border Grill at Mandalay Bay.
Two weeks ago, Minor announced he was leaving that project that planned to serve his mix of Mexican barbecue he made famous on his Truck-U Barbeque food truck.
Now he announces that he’s taking over Chica, the Latin-influenced restaurant from Lorena Garcia opening in the former DB Brasserie space at the Venetian this spring. He’s bringing Canonita’s Donna Willey on board to help him out. Both worked together at Border Grill at Mandalay Bay.
Chica, from John Kunkel’s 50 Eggs Inc. that has Yardbird Southern Table & Bar at the resort, plans to serve Latin American cuisine, with influences from Venezuela, Peru, Brazil, Mexico and Argentina, among others. Chica plans to serve lunch, dinner and a weekend brunch.
