Red Rock’s Salute Lands a Big-Name Chef

Philly’s Luke Palladino brings his Italian touch to the restaurant

Quite a coup for Clique Hospitality. The group’s Salute Trattoria Italiana just landed Luke Palladino as the new executive chef of the Italian restaurant at Red Rock Resort.

Palladino worked with luminaries such as Paul Bertolli, Jeremiah Towers, Emeril Lagasse and Todd English, opening Onda Ristorante at the Mirage as the executive chef when it opened in 1999 until 2001. He worked in Venice, Italy, opened the Aspen outpost of Olives as chef de cuisine and then took his talents to Atlantic City to open Specchio, Ombra and Risi Bisi at the Borgata. The Culinary Institute of America grad closed his restaurants Luke Palladino Seasonal Italian Cooking in Linwood, New Jersey, LP Steak at Valley Forge Casino Resort in King of Prussia, Pennsylvania, and Palladino’s on Passyunk in Philadelphia in September after filing for bankruptcy.

Palladino revamps the Salute menu with dishes such as lobster fri diavolo with tagliolini pasta, and saltimbocca stuffed with fontina cheese and smoked speck ham.

Salute opened in September 2015 with Luciano Sautto as the chef. Sautto is now the executive chef at Quattro Gastronomia Italiana in Miami Beach.
