California’s Ricos Tacos El Tio is hoping to make an impression in Henderson when it debuts this year, promising "made-to-order Mexican" food and an ambition to distance itself from the larger chains.
Still operating three fast-casual outposts in Gardena, Inglewood and Lynwood, they will be expanding to 1430 W. Horizon Ridge Parkway, close to a Timbers Bar & Grill and Stephanie Street and taking over a shuttered, 13-year-old Jack In the Box.
Current paperwork is asking for permission to add a drive-thru to the 2,852-square-foot restaurant and once they open the plan is to be serving daily from 8 a.m to 10 p.m. The restaurant does not expect to make major change to the building exterior.
On the menu, vampiro tacos, served on a crispy corn tortilla, plus lengua, carnitas, cabeza and buche tortas, quesadillas, birria de chivo, a slow steamed goat stew with mild chili seasoning, plus their namesake tacos, including those pork stomach, beef head and tongue choices.
