Gaming is set to return to the Montelago Village at Lake Las Vegas for the first time since 2013. Proof Tavern is telling potential employees they are aiming for an April 1 opening date inside the 6,440-square-foot former home of the Black Pepper Grill and Brooklyn's.
Originally named RST Gaming Tavern, inspired by the restaurant’s creator Robert Samuel Tibolt, Proof Tavern will be serving breakfast, lunch and dinner, with last year’s original proposal imagining they would be open from 10 a.m. until midnight Sunday through Thursday and until 2 a.m. on Friday and Saturday.
The "upscale American" concept will install 15 video poker machines, offering the only gambling in the immediate area since the demise of Casino Montelago. They will join another recent arrival, the French-inspired Mimi' & Coco' Bistro.
Kelley Jones Hospitality is attached to the project, veterans of assisting Todd English P.U.B. at Aria and Poppy Den and Hops & Harvest at Tivoli Village.
