Robert Solano — former executive chef of Mingo Kitchen & Lounge, Mundo and Olivia’s Latin Cuisine — has expanded out on his own, bringing his personal taco spin to Spring Valley.
Bomb Tacos takes over the shuttered 1,000-square-foot former Pancho's Kitchen space, close to the corner of Durango Drive and Twain Avenue and Other Mama in the Global Plaza retail center. Boldly predicting "you will be addicted!," Solano's declared mission is to serve "the most BOMB gourmet tacos you've ever had in your life."
On the casual, counter-service menu, $10 carnitas or carne asada "street style tacos" and $12 white fish or rock shrimp tacos, all served with rice and beans, plus $9 crispy quesadillas, a $12 tostada salad, $9 chicken or beef taquitos and an early hit, the $12 "wet burritos."
For the future, chef Solano is also promising menu upgrades including a weekend "Mexican brunch," planned to include huevos rancheros, huevos benedict, ropa vieja and "many more of all MY all time favorite creations!!!!"
