Wondering what’s taking the place of Rice Republic, the Asian restaurant that closed in Downtown Summerlin? Here comes Holley’s Cuppa, the independent coffee and tea house from Holley Steely, a former aerialist in Wynn Las Vegas’ Le Reve.
Steely grinds her beans as coffee is order and serves it using a pour over method. She uses Santa Cruz Coffee Roasting for her beans, sourced using "sustainable relationships in specialty coffee." She uses bans from beans countries such as Indonesia, Ethiopia and Brazil.
Holley’s Cuppa already has a location at 9265 S. Cimarron Road as well as The Cuppa Coffee Bar at the Gramercy at 9275 W. Russell Road.
Reader Michael Bondi tipped Eater Vegas that at Downtown Summerlin, Steely plans to open another another The Cuppa Coffee Bar, touted for an April debut. Look for cold brews, lattes and blends as well as milkshakes, fruit smoothies and hot chocolate.
On the food side of the menu, find muffins, coconut sweet bread, vanilla almond bread, cookie cheesecake, a cinnamon roll croissant and peanut butter cookie.
Heartier dishes include a sausage, egg and cheddar on an English muffin, croissant or bagel; bacon, egg and cheddar on an English muffin, croissant or bagel; egg and cheese wrap; turkey fusion burger; chicken salad croissant; roasted pepper turkey wrap; hummus wrap; and more.
