Your New Way To Score Reservations at é by José Andrés

One of the toughest and most-coveted reservations in Las Vegas just got a bit easier. Now é by José Andrés at the Cosmopolitan is on the Tock reservation system, with dates open for three months in advance. On the first of the month, new reservations roll out.

Each month’s seatings are released on the first of each month at noon. So, for example, on May 1, the restaurant releases all seats available through July 31. The dinner is paid for in advance.

The nine-seat chef’s table inside Jaleo has two seatings at 5:30 and 8:30 p.m. every night except Monday. The two-hour dinner features 20-plus courses, with chefs roll out course after course, many cooked right at the table and meticulously plated with tweezers, dry ice embellishments and novelty dishware, including plaster replicas of Andrés’ hands. Frequently, guests can plan to dine on Cava Sangria, an edible sphere cocktail filled with white sangria made from Cava, gin and fruit as well as the empanada, an empanada made with a pillowy cotton candy shell, filled with foie gras and corn nuts.

The small room features a dramatic red glass wall and red velvet curtain, a nod to the chef’s concept of cooking as performance.

Wine pairing options start at $130, but guests can also choose a $300 or $500 option as well. The full Jaleo wine list, as well as full bar, are also available. Reservations.
