The switcheroo from Japonais to Otoro Robata Grill & Sushi is complete. Tonight, the restaurant debuts at the Mirage with Fernando Sposato as the executive chef. Previously, he helmed Japonais since December, and before that, Blue Ribbon Sushi Bar & Grill at the Cosmopolitan of Las Vegas.
Guests can look for nigiri, sashimi, sushi rolls, specialty rolls and hand rolls, as well as starters such as ahi poke, pork gyoza, hamachi crunch, seared black cod and a daily rotation of oysters.
The rock, one of the signature dishes of Japonais menu, returned with its thin sliced marinated sirloin cooked at the table on a volcanic rock. Chicken or spicy seafood ramen, a katsu rice bowl and tempura udon make the menu. Tempura vegetables or rock shrimp, a seared duck breast, pan-seared sea bass and more make up the entrees.
The robata grill features skewers of marinated vegetables, shishito peppers, Chilean sea bass, octopus, day boat scallops, salmon, king crab and more round out the menu.
