Former Due Forni chef and co-creator Carlos Buscaglia jumped ship for Hexx Kitchen & Bar at Paris Las Vegas as the new new executive chef.
The chef got his start when he worked at a deli in Buenos Aires for his parents. At 15, he moved to Las Vegas, first working for neighborhood Italian restaurants, and then moving over to MGM Mirage in 1995. By 2003, Buscaglia opened Fiamma Trattoria & Bar at the MGM Grand with James Beard Award-nominated chef Michael White, and was promoted from master cook to sous chef in just three months.
Buscaglia opened Due Forni with his long-time friend Alex Taylor in 2010. The duo went on to open in Austin, a location that closed in July 2016.
Hakkasan Group brought on Gert F Kopera as executive vice president, global restaurants. He’ll oversee the group’s restaurants and expansions. Previously, he was the chief operating office at D.ream, another restaurant group that includes places such as Zuma, now open at the Cosmopolitan. Kopera worked in senior positions at Jumeirah Group and Rosewood Hotels & Resorts, where he was vice president food and beverage for seven years. Kopera will work on Hakkasan Group openings in Hawaii, Mexico, Bali, Jakarta and Saudi Arabia.
