With an abundance of local ventures offering build-your-own bowls and sushi burritos, it was perhaps only a matter of time before the trend would move into the world of bento boxes.
Newcomer Kuben in Spring Valley has debuted its breakfast and lunch concept, with a compact space and menu that promises a "box of big flavor" and a "quality, craft, quick" approach to healthy fast casual dining.
Located inside the shuttered, 911-square-foot former corner home of Crepe Shack at the Crossroads Plaza, close to the intersection of Fort Apache Road and Tropicana Avenue, customers place their orders at the counter.

On the menu, bento options such as the $11 beef and onion and $12 salmon, pork rib or eel that arrive with “side dishes, salad and steamed rice.” Noodle and rice bowls are priced at $7, or customers can opt for the $11 chirashi, eel or salmon fish bowls. Three toppings are permitted for each bowl, with add-ons including tuna mayo, edamame and tempura flake.
Mini rolls are priced at $4 and rice balls at $2.50. Soups and salads include the $5 squid, $3 seaweed and $1.50 miso. From 7 a.m. to 10 a.m., the restaurant also serves scrambled eggs rice for $5.
