Yonaka’s Purple Potato Moving to Henderson

An elevated approach to create-your-own bowls

Yonaka Modern Japanese, an Eater Vegas essential restaurant, moved into the casual arena last December with a take-out and delivery-only spin-off Purple Potato by Yonaka.

The concept has proven so successful that it is relocating to Henderson and its own dedicated location. Yonaka discontinued service at the original restaurant, and promised to open the location soon.

Located at the Eastern Marketplace, close to the intersection of St. Rose Parkway and Eastern Avenue, Purple Potato takes over a shuttered, 1,353-square-foot Subway outpost, right at the entrance to the retail center.

Like the Flamingo Road original, this will be a delivery- or pickup-only concept.

Emphasizing quality and less common choices of ingredients, Purple Potato serves "Craft Your Own," plus “Chef Crafted Bowls.” On earlier menus, the restaurant also featured miso and creamy tomato soup, Yonaka’s famous crispy Brussels sprouts, crunchy curried chickpeas and cucumber mint or ginger peach lemonade.

Customers create their own bowl with a choice of proteins, then add ingredients like "mapled tofu," raw ahi tuna, raw Scottish salmon, Angus Beef, house cured bacon and raw Japanese yellowtail. A lengthy list of toppings have included chickpea croutons, baked herb falafel, grapes and dried tart cherries.
