Chefs and restaurateurs Bruce and Eric Bromberg return to the Cosmopolitan of Las Vegas after a brief hiatus to open Blue Ribbon at the resort today. The restaurant takes over their former Blue Ribbon Sushi Bar & Grill restaurant, which closed in January, at the resort.
Oysters on the half shell, beef marrow and fried chicken, menu items the brothers originally served when they opened Blue Ribbon in New York City in 1992, make the menu in this “part saloon, part oyster bar, part American eatery and part international culinary tour.”
The SoHo location inspires the menu here, with dishes such as beef marrow and oxtail marmalade, cheese fondue, pu pu platter and pan-roasted skate with crispy potatoes, shrimp and bacon.
The Brombergs also introduce Vegas-only dishes such as pan-roasted Dover sole with artichokes and capers, bourbon-glazed prime rib of pork, and raw bar items including the Plateau Cosmopolitan, with oysters, clams, shrimp, lobster, caviar and crab, served with either a bottle of Champagne or chilled vodka.
