Jacksonville, Florida’s Metro Diner arrived in Las Vegas last March, but by this fall, the restaurant will have already created a mini-empire serving “comfort food with flair.”
The second diner is headed to the southwest and the Rainbow Warm Springs Retail Plaza, taking over a prominent, 3,451-square-foot space right on the corner of Rainbow Boulevard and Warm Springs Road. The built from scratch restaurant is larger than the Spring Valley original, a remodeled former Carl’s Jr.
Metro Diner’s managing partner Nick Samero, announced on KLAS-TV’s Las Vegas NOW show, the Rainbow location will officially debut on Tuesday, July 18.
While future opening hours are yet to be announced, the original diner is open from 7 a.m. to 8 pm. daily and until 9 p.m. on Fridays and Saturdays.
Samero also confirms a third location on Henderson’s Stephanie Street is looking at a fall debut. On the menu at all expansions, hearty dishes like fried chicken and waffles topped with house-made strawberry butter, Charleston shrimp and grits with sweet and spicy sauce, biscuits and gravy, chicken pot pie and the Metro pot roast.
