Chef D. Michael Evola brings his New York-style pizzas to Henderson at E-String Pizzeria. His Brooklyn Bros. Pizza in Everett, Washington, opened in 2006 and serves pies baked in a stone oven at 550 degrees that create a smokey, crisp crust.
The former guitarist for bands such as Foghat uses imported San Marzano tomatoes, cured meats and organic vegetables on his pies.
He tells Pizza Today that his dough takes three to four days to mature, and if he runs out of dough, he closes in Washington.
