Burger and craft beer concept Eureka! had originally expected to debut its “rustic industrial environment” on Fremont East this summer, but new job postings confirm the California-based company has reset the countdown clock.
Now hiring for select positions, potential employees are being advised of a February 2018 opening date, bolstering an official “early 2018” update from the Eureka! Restaurant Group back in the spring.
First announced in July 2016, original plans called for Eureka! to take over 4,494 square feet of the Emergency Arts building and create an extra 355 square feet of expanded patio seating outside on Fremont Street. The "industrial rustic" dining room included 27 guests sitting around a rectangular, central bar, serving "exclusively American craft" beers.
A blade sign on the corner of the building was proposed to read "Eat. Drink. American.," referencing a dining menu inspired by regions around the country, including Southern cuisines, bison from the Plains and Pacific Northwest salmon, plus a popular range of burgers.
