Still a month until autumn and already fall 2017 looks to be a big season for restaurant openings in Las Vegas. The cooler weather serves up 11 anticipated restaurant openings all across Las Vegas. The Monte Carlo dishes out two of the biggest openings with Primrose and Bavette’s Steakhouse & Bar, while Tivoli Village may finally see the opening of Canter’s Deli. A smorgasbord of smaller restaurants from the owners of Yonaka Modern Japanese and Flock & Fowl bring eager diners a second version of their already popular places. Primrose
Location: Monte Carlo
Key Players: Bryce Shuman, formerly of Botany in New York City
Projected Opening: September
The revamp of the Monte Carlo into the Park MGM brings a bevy of new restaurants to the resort. First up, Primrose, from Bryce Shuman, formerly at Michelin-starred Botany in New York City. Primrose plans to offer a South of France-inspired, vegetable-forward menu, with an emphasis on open-fire cooking. Shuman tells Eater Vegas that Primrose is not a vegetarian restaurant even though vegetables take center stage.
Primrose fills 12,155 square feet at the Monte Carlo in the remodeled lobby space near the pool, also undergoing a renovation. The indoor/outdoor space will add a second floor with a terrace, also accessible from a new upper level addition to the lobby. Shuman says that almost one-third of the dining space sits outdoors. This space is huge, with room for 495 guests.

Bavette's Steakhouse & Bar
Location: Monte Carlo
Key Players: Brendan Sodikoff of Chicago’s Hogsalt empire
Projected Opening: September
The Monte Carlo’s other big fall opening comes at the hands of Chicago steakhouse heavyweight Bavette’s with its throwback feel and tough to snag reservations. This massive restaurant takes over the former Brand space with a 10,035-square-foot restaurant, which will include a “living room.” The Las Vegas location plans to include a 1920s speakeasy vibe.

Canter’s Deli
Location: Tivoli Village
Key Players: The famous LA deli
Projected Opening: Mid-September
Fans of Canter’s Deli have patiently awaited the return of the Los Angeles deli to Las Vegas. With interior construction complete, the 6,355-square-foot restaurant and the adjoining bakery already have display counters ready for the delicatessen selections, plus the famed New York-style cheesecake and black and white cookies. Headed for the walls, a reproduction of the large mural painted by Art Mortimer in 1985 covering one side of the parking lot at the original Fairfax Avenue deli. A second location is under construction at The Line Promenade.

The calling cards of this new restaurant going in the former Salt & Pepper space include lunch, brunch and dinner, along with two patios on two levels. Dishes at Hamptons from chef Jay Bogsinske, formerly of Saint Marc in Huntington Beach, California, include a Little Havana Cubano featuring Duroc pork loin and country ham, Mary’s free-range chicken and biscuits, a Scottish salmon mignon and for brunch, a short rib and fried egg sandwich and peanut butter and banana waffle with salted caramel.

Makers & Finders
Location: Downtown Summerlin near Macy’s
Key Players: Josh Molina
Projected Opening: Nov. 1
Makers & Finders heads to Downtown Summerlin with a similar menu of “Latin comfort foods” as well as coffee and an “updated look.” The restaurant takes over a 2,300-square-foot space near Macy’s at the outdoor shopping center. When open, the coffee house will offer indoor and outdoor seating.
Breakfast, lunch and dinner will remain on the menu, with arepas, empanadas, plantain chips, chilaquiles, and vegan and vegetarian options. Owner Josh Molina says a daily happy hour arrives when the new location opens this fall.

Purple Potato
Location: Eastern Marketplace, close to the intersection of St. Rose Parkway and Eastern Avenue
Key Players: The owners of Yonaka Modern Japanese
Projected Opening: Fall
Yonaka Modern Japanese, an Eater Vegas essential restaurant, moved into the casual arena last December with a take-out and delivery-only spin-off Purple Potato by Yonaka, offering create-your-own and chef’s bowls. Now the concept gets its own home in a former 1,353-square-foot Subway outpost. Customers can create their own bowls with a choice of proteins, then add ingredients like "mapled tofu," raw ahi tuna, raw Scottish salmon, Angus Beef, house cured bacon and raw Japanese yellowtail. A lengthy list of toppings have included chickpea croutons, baked herb falafel, grapes and dried tart cherries.

Flock & Fowl
Location: The Ogden
Key Players: Sheridan Su and Jenny Wong
Projected Opening: Fall
Flock & Fowl owners Sheridan Su and Jenny Wong move to a second location in the former Itsy Bitsy Ramen & Whiskey space on the bottom floor of the Ogden with an expansion. The restaurant, a stalwart on the Eater 38, brings Hainan chicken, only this time for lunch and dinner. Another first: no cash, only plastic, which has caused an uproar in the local dining community.

Cafeteria-style Japanese fare comes to Chinatown via Cafe Sanuki with a family-themed atmosphere and price point under $10. Udon noodles, tempura dishes and hand rolls make the menu.

Taro ball, herbal jelly, jelly ice, tofu pudding, rice noodle, as well as other traditional desserts like turnip cake, rice dumpling and oil rice make the menu of Meet Fresh with more than "400 stores in over 100 cities in China, Taiwan, Malaysia, Australia and South Korea.” The California outposts have Chick-fil-A opening worthy lines for dishes "imbued with Taiwanese kindness and traditional flavors.”

Culinary Dropout’s parent company Fox Restaurant Concepts brings a second location to Las Vegas with North Italia with handmade pasta and pizza. The space near Honey Salt features 159 seats inside and 88 more out on a patio. A long bar will be built right by the entrance.

MacKenzie River Pizza

Perhaps the selling point of this restaurant out of Montana isn’t so much the food but the location. MacKenzie River Pizza sits inside the Golden Knights’ practice facility in Summerlin, across from Red Rock Resort and Downtown Summerlin. The menu features $10.50 fish taco skewers, $10 wings, the $13.50 “poutine” burger, a $10.50 pulled pork sandwich, a large selection of pizzas and the $7 "Sky High Cheesecake.” The drinks menu includes $9 martinis, like the “Huckleberry Lemon Drop,” $8 “Smoked Old Fashioned” or “Moscow Mule” cocktails and draft beers ranging in size from a 16-ounce pint to the “34-ounce OMG.”
