Shaun King takes over David Chang’s restaurant while Daniel Marquez returns to Las Vegas

Shaun King comes on board at Momofuku at the Cosmopolitan of Las Vegas as the executive chef, replacing Michael Chen. King brings influences of French, Japanese and American cuisines to David Chang’s very first restaurant in Las Vegas.

In the past, King worked as a chef de cuisine at Rick Moonen’s RM Seafood at Mandalay Place in 2005, then became the executive sous chef of SushiSamba in the Grand Canal Shoppes in 2007. He left Las Vegas to be the chef de cuisine at Bradley Ogden’s Root 246 in 2012, then spent some time as the executive chef at Martis Camp in Lake Tahoe. In 2014, he moved to Chicago to become the executive chef of The Dawson. Most recently, King oversaw the operations for the back of house at Pabu San Francisco and Ramen Bar for the Mina Group.

Over at the Grand Canal Shoppes, Cañonita brought back Daniel Marquez as executive chef. Marquez worked with chefs Mark Kiffin, Mark Miller and Stephan Pyles in Las Vegas. Marquez opened and served as executive chef at Cañonita from 1999 to 2012. After living in Las Vegas for nearly 20 years, he moved to Albuquerque to once again work with Kiffin and open Zacatecas Tacos + Tequila.
