Meet Steven Gotham, the new executive chef of Rose. Rabbit. Lie. at the Cosmopolitan of Las Vegas. The Pennsylvania native loved watching the Great Chefs series growing up, and spent summers working on a Mennonite farms near his home.
Gotham worked under the James Beard Award-winning chef Susan Spicer at her restaurant Bayona in New Orleans, as well as on the central coast of California at Ventana Inn, the Lodge at Pebble Beach and Earthbound Farms, where he created custom dishes daily made entirely of produce sourced from surrounding organic farms.
Gotham moved to Las Vegas to work with Joël Robuchon at the Mansion at the MGM Grand and the chef’s namesake restaurant, Joël Robuchon, then became the executive chef at Trump International Hotel. In 2010, Gotham joined the Cosmopolitan of Las Vegas as the resort’s chef de cuisine. Gotham went on to work with Michael Mina as executive chef of Bourbon Steak and Bourbon Pub at Levi’s Stadium in Santa Clara.
Now at Rose. Rabbit. Lie., he takes on the modern supper club theme with classic revamped dishes from the 1950s and 1960s.
