A prime rib-centric restaurant opens

North Las Vegas lands a new prime-rib centric steakhouse, now open at the Cannery. Carve Prime Rib takes over the Waverly’s Steakhouse space at the resort.

Obviously, prime rib takes center stage with four cuts from 10 to 16 ounces. Carve uses 40-day dry-aged Midwestern corn-fed beef, and each serving comes with a house salad or corn chowder, as well as buttery mashed potatoes. Roast salmon, fried chicken, a prime rib burger, roasted chicken, pan-seared scallops and shrimp, and a pork porterhouse make the menu alongside sirloin steaks, filet mignon, bone-in rib-eye, and a New York strip.

Carve once had a sibling restaurant at the Eastside Cannery. That location closed in May 2017.

Carve is open every Wednesday, Thursday, and Sunday from 5 to 9 p.m. and Friday and Saturday from 5 to 10 p.m.

Waverly’s closed in August and went through a brief remodel.
