A missed “tentative grand opening” earlier this year has only grown the number of vocal and very eager customers on social media waiting to try breakfast and lunch restaurant My Huevos, now back on track for a November debut.
Slowed by permits and county approvals, the westside casual spot will take over an 896-square-foot corner at the intersection of Sahara Avenue and Rainbow Boulevard, across the street from Hash House A Go Go.
During the delays, the team has worked on its B.Y.O.B., “build your own burrito” menu specializing in creating a “quality burrito with fast food speed.”
Featuring a diverse collection of ingredients the owners calculate will result in “4,000” possible combinations, burrito stuffings will include weenies, bacon, “chicken fried steak,” and a “biscuit and gravy” combination, plus sides of tater tots, chorizo potatoes, and sweet potato hash with options of Sriracha maple syrup, chipotle crema, or “Fire Huevos Sauce.”
Initial announcements anticipated daily opening hours of 5.30 a.m to 1.30 p.m.
